1 lb of sauteed ground chicken, turkey or beef
46 oz low sodium V8 juice
1 – 14.5 oz can beef broth
1 cup water
20 oz frozen mixed vegetables
2 bay leaves
1 tbsp dried minced onion
3/4 cup quick barley
Combine all ingredients in a stockpot.
Bring to a boil and then simmer until barley is cooked (10-12 minutes).
