Clam and Corn Chowder


This recipe is just like an old friend…comfortable, warm and inviting.  Perfect for a chilly night and so simple to pull together!  I guarantee it will become a family favorite.

2 Tbsp butter

2 cups chopped onion

2 stalks celery, chopped

1/3 cup flour

2-8 oz bottles clam juice

3-6 oz cans minced clams

2-15.25 oz cans corn, drained

2-14.5 oz cans diced potatoes, rinsed (or use 3-4 medium sized fresh potatoes, diced, boiled until tender and drained)

2 bay leaves

2 cups low-fat milk

Sauté onion and celery in butter until soft.  Sprinkle flour over mixture and stir to combine.  Stir in clam juice, clams and corn.  Add in potatoes, bay leaves and bring to a boil.  Simmer for about 10 minutes.  Add milk and heat through.
