Chicken Barley Soup

Nothing says LOVE more than a bowl of soup. This beauty is so simple, yet full of
authenticity and soul. Serve with some warm bread and you are good to go!

1 tbsp olive oil 2 boneless, skinless chicken breasts cut into bite-sized pieces
4 carrots, diced salt & pepper
4 celery stalks, diced 6 cups chicken broth
1 medium onion, diced 1 cup quick-cooking barley
  5 oz. baby spinach

In large stock pot sauté olive oil, carrots, celery and onion. Cook until tender. Add in chicken, salt/pepper and cook about 2 minutes.
Add in broth and bring to a boil. Stir in barley. Cover and reduce heat to simmer. Cook for about 10-12 minutes. Add in spinach. Stir through and serve.
