Baked Parmesan Zucchini Sticks

4 zucchini, quartered lengthwise
½ cup grated parmesan cheese
½ cup seasoned panko breadcrumbs
¼ tsp garlic powder
salt and pepper to taste
2 tbsp olive oil
Preheat oven to 350 degrees. Coat baking sheet with nonstick spray or parchment paper.
In a small bowl, combine grated cheese, bread crumbs, garlic powder, and salt and pepper.
Place sliced zucchini onto prepared sheet. Drizzle with olive oil. Sprinkle Parmesan mixture over the top. Bake about 15-20 minutes, until tender; then broil until crispy and brown.
