Harvest Pumpkin Pineapple Bread


Fall is on the way and this bread is bursting with fall flavors!  Don’t be skeptical of the unlikely combo of pumpkin and pineapple-it works!  All it takes is about 15 minutes of prep to produce a new favorite breakfast bread or afternoon snack!  

2 1/2 cups sugar

1/2 cup butter

1 – 15oz can pumpkin

1 – 8.25oz can crushed pineapple in juice, undrained

4 large eggs

3 1/2 cups all purpose flour

2 tsp baking soda

2 tsp pumpkin pie spice

1 tsp salt

Preheat oven to 350 degrees. Spray 2 -8.5 x 4.5 inch loaf pans with cooking spray.

In mixer bowl, cream sugar and butter. Add pumpkin, pineapple and eggs. Blend well. Set aside.

In a medium bowl combine flour, baking soda, pumpkin pie spice and salt. Add into pumpkin mixture; mixing until just moistened.

Divide batter evenly into prepared pans.

Bake 55-65 minutes. Cool 5 minutes in pan; then remove to a wire rack.

If desired, lightly sprinkle with powdered sugar over the top to serve.
