Chicken Barley Soup
Nothing says LOVE more than a bowl of soup. This beauty is so simple, yet full of
authenticity and soul. Serve with some warm bread and you are good to go!
| 1 tbsp olive oil | 2 boneless, skinless chicken breasts cut into bite-sized pieces |
| 4 carrots, diced | salt & pepper |
| 4 celery stalks, diced | 6 cups chicken broth |
| 1 medium onion, diced | 1 cup quick-cooking barley |
| 5 oz. baby spinach |
In large stock pot sauté olive oil, carrots, celery and onion. Cook until tender. Add in chicken, salt/pepper and cook about 2 minutes.
Add in broth and bring to a boil. Stir in barley. Cover and reduce heat to simmer. Cook for about 10-12 minutes. Add in spinach. Stir through and serve.
